Meal Planning Must Makes.

A photo of a shopping list, a spoon, brown rice, and garlic on a cutting boardThe beginning of the year always sparks a whole health kick for me, but this year it’s been more of a slow transition. I think incorporating healthier behavior a little at a time will help me form longer lasting habits. B and I are trying get into weekly meal planning for the benefit of making healthy meals and also for budgeting reasons. I know meal planning is really, very popular these days so I thought we could have a little monthly discussion on the best recipes we’ve tried each month.

As far as our eating habits go, we eat mostly vegetarian. I’m pretty much a demi-vegetarian at this point (It’s a thing, go check it out.) as I’ve been eating a little bit of chicken here and there. B will pretty much eat anything.

We are big fans of quinoa in this household so anything that incorporates the grain gets two thumbs up from us. I was craving a bit of Mexican and this Veggie Fajita Quinoa Casserole from Baker by Nature really hit the spot. Not gonna lie, it was a lot of cheese, but who doesn’t love a mess of cheese? This casserole lasted us a couple days and it was incredible.

I’m a big fan of anything Asian especially when there’s a sauce involved. This Honey Ginger Tofu and Veggie Stir Fry by Pinch of Yum satisfies every time. The dressing/sauce is super good on everything so I suggest doubling the recipe and saving some for salads because it is that good.

One of the most unexpectedly delicious bites of the month was this Spaghetti Squash with Bacon, Spinach, and Goat Cheese by Christine Byrne. I love every individual ingredient of this dish and together, they’re even better. It feels like fancied up comfort food that doesn’t make you feel heavy and overly full.

I did take a spontaneous baking adventure this month when I was craving cookies. I’ve been getting more into oatmeal and I love peanut butter so these Oatmeal Peanut Butter Cookies were gonna happen at some point. They’re moist, but a bit crumbly because of the oats. I made a bit more than a dozen and between B and I, they only lasted a day.

    Your recipes really sound yummy! During the week I usually eat lounge food (i. e. whatever lounges in the fridge moves on to the plate). I’ve found it really helpful to carefully watch what is going into the fridge in the first place. So good idea with your planning. Keep it up!
